Sitting in the car with off, pedal is firm (after using up the servo) with engine running I can press the pedal to the floor is this normal? Brakes seem to work ok.

The standard test to check the servo is working correctly is, as you describe, to evacuate the servo with the engine off, and then start the engine with your foot remaining firmly on the pedal.
If working correctly, the servo will suck the pedal close to the floor.
On the other hand, if the pedal goes to the floor whilst driving, you have a fault.

The pedal doesn’t go to the floor when driving in the sense of normal braking however I can get the pedal to the floor / end of travel when stationary and engine running
