JD or Toby - would you recommend me touching up all chips / scratches prior to polishing my entire car or polishing the car to see what comes out and then subsequently touching up and wet sanding?

Most quality shampoos, diluted correctly, will make sure that any existing protection is left in tact. It's when people don't read the dilution instructions and mix too much shampoo in that it effectively becomes a degreaser and strips wax.

I've been using Supernatural for the past 12 months and wouldn't hesitate using it again. I always end up changing my shampoo when I run out though so will probably try something different soon - maybe the Auto Finesse range.

'Less is more' is one of the foundation rules of detailing Jordi. The reason it's hard to get off is because it's curing in massive lumps. It's wax, it goes hard when it's cooled, which is does when you're not handling it. It needs to be thin.
Depends what condition your paintwork is in. SRP is a filling polish, so if your paint looks swirly after the wash, it'll still look swirly after the EGP.
Having used a rotary on the odd occasion, my experience is that common sense prevails. If you keep on checking the heat of the panel, keep the rotary moving and be aware of how easy it is to catch an edge that you should be fine. You need to also be aware of the damage you can do.
