Nope no memory adding, I'd go for 32gb for Films etc (but I'd also go Android for easier access to expandable storage - much easier for music/films if you don't use itunes).
It won't be the same screen as the normal iPad, Retina just means that the Pixels Per Inch (PPI) is higher than the eye can detect (aka you cant see any pixels).

Not sure what specs the GPU on the CPU are (can't seem to find any to compare vs 4350), but the 4350 is very very dated!
I'd run a benchmark (Heaven) with the GPU, and then run one with the onboard GPU, and see how you fair. You will actually probably find the onboard is quicker, though cannot...

Move away from the APU and the Crossfired GPU and get something more powerful (upgrade GPU, CPU on it's own is fine).
7950 for £250 ish would be a very good upgrade.
Looks good ,what rads do you have atm? I run a 360 + 140 for an i7 + 7970, but tempted to just ditch them and go for 2x 480's if/when I get a 900D (it won't fit under my desk, but I'm gonna get on anyway - bawler.)
Also what thickness is the rad, looks thicker than 60mm?

Ahh yeah know what you mean, just made a fan upgrade on my radiators, and what was a pretty quiet PC anyway is now near silent - you can't beat it!
