I would go for 80/85 or 85/90.
Have used both setups. For me I'd say that anymore than that and the car is literally undrivable on the road without destroying your back. I don't even like driving mine now on the road but I put up with it for my local track (Brands).

Valeo clutches are dog s**t, wouldn't go near them again after two consecutive failures in no miles at all. I'm just thankful they didn't damage the box or the block when they broke!
Fabric ones just look very cheap and unfinished, or like you've got something caught in your grill. Especially when they are flapping about.

New tyres will definitly need balancing. All tyres are different and when they are spinning at x revolutions per minute you will feel the imperfections through the steering wheel.
Start with around 25 PSI and then monitor at every opportunity. You want to aim for 30 PSI when hot across all four.
If you have good suspension then you shouldn't need much different to that.
For what the OP wants I'd say the AD08R is the best value for money choice. £300 fitted for all four is a bit of a bargain. Would just need to be sensible in serious rain on the road (which you should be anyway)

I have both at the moment. AD08R are better for dry. R1R better for wet.
AD08R is a fast road/entry level track tyre. R1R is just a generally good road tyre, not good for track unless it's wet.
Neither have very stiff sidewalls.
Looks great. I think they have aged excepionally well. The lines on them look lovely and quite agressive.
Great colour choice too as you can distinguish the gills and grills nicely.

My epas feels great. Doubt i'd be able to tell the difference back to back compared with a PAS setup. And then you obviously have the rest of the entire adjustment range to benefit from. So from that I'd say it has to be something else giving you issues.
