£800 will find you a valver in need of a little work but £3k would have to be an absolute minter 30K miles fsh. Look on 16valver,there are a few on pistonheads at the moment.
What he said, some stainless is poor quality. Try and stick a magnet to it if it sticks poor quality, but if it does not then high quality stainless and high in carbon.
Did you go to a main dealer bodyshop because these will rip you a treat?
If the bodyshop was a smaller one and they quoted you £400 plus then they were probabley busy and did not need the work. Although £400 is taking the piss even for spoiler,door mouldings,door handles,mirrors.
Two bolts to take the caliper off but you dont need to take the hose off.You will need something to push the piston back in to the caliper though, a bit of wood and a decent lever would be ok if you have not got a wind back tool.
Its got two seats just like your V6 and can be driven on the road like your V6, although a little impractial but it will still do what you ask for a car under 20k. You sort of left yourself wide open for that one but i can see where you are coming from.
Unless they are brembos or the like i would not bother painting the calipers. By painting the calipers you are letting everyone know you have poo brakes
