Yep, they’re all a compromise one way or another. Hard data is difficult to come by, and the same tyre in a different size can perform quite differently to a tested tyre of a certain size.
For UK road driving some of the high performance summer tyres are worse overall in metrics like wet braking than “touring” tyres. A Clio isn’t going to be testing the limits of tyre grip like a two tonne 400bhp+ car.

Guidelines haven’t changed in quite a while, and a lot depends on how flexible your MoT tester is. If the car is caged and has harnesses then you can try to present it as a rally car and then it doesn’t need airbags etc.
Based on the usual naming conventions on the forum surely the groups would be:

I know there’s a problem with them due to different metals in a bracket around the wheel arch causing the aluminium to oxidise which makes the arches bubble. It was supposed to be fixed in the facelift IIRC but a lot of cars have had paintwork warranty repairs. Not sure if there are other issues...
