ECU/Mapping question

After reading the 185bhp remap thread it made me think about something I've heard a few people mention and wondered if anyone knows the answer?

I've heard a few people say in the past that the ECU learns your driving style and adjusts to suit. If that were true then the ECU's map would be constantly changing wouldn't it? I have noticed my car does feel a lot more responsive after a good blast but I always put it down to blowing out a few cobwebs.

Your ECU relies on many sensors to constantly adapt to all the variables it's measuring.

Say it's a cold frosty morning in mid winter in Sweden, it will measure that the air being drawn into the engine is denser and contains more oxygen than on a 36C afternoon in high altitude in the Guadarrama's in Spain mid summer. Now the system needs to be able to meet emission outputs in both these situations, the only way it can do this is being able to adapt fuel and ignition timing for both these situations, it also needs to be able to detect bad fuel via knock sensors and adjust timing to help prevent damage from detonation.
