what cables do I need to fit a Pioneer MVH-X560BT Stereo to my car to allow the stalk controls to be used, also I presume I will need an aerial adaptor as well, not got the stereo yet so just trying to get prepared before it arrives

You'll get all new wires when you buy the stereo.
For the stalk controls i'd try looking on eBay etc, don't go to halfords they tried to charge me over £100 for an adaptor lol.
You'll need an aerial adaptor, couple of quid off eBay again.
