Can you get an after market head unit that you can use the original stalk adaptor? if not do you just replace it with the new models and are there all a standard size

No, you need an aftermarket adaptor to suit your car, it's age and the HU you've fitted.

what i mean is can you use the standard stalk control to power (skip cd, turn volume up etc) a after market head unit. Or do you have to purchace a new stalk control for this?

The stalk will work with an aftermarket HU yes, providing you buy an adaptor to suit the HU
