The toyo manifold is cheap crap and you 99% of the time lose power, you can get most back with mapping which is actually a must due to the fuelling been so far out if running the stock map!
Just checked an engine we are doing now and with ACL DLC coated big end, Manley rods on a stock crank the clearance is just under 2 thou. All of our builds are done with these and we have never had a failure. Always use Millers Nanodrive 5w40 oil.
The car wouldn't need mapping to see if there was a gain, more air into these means more power, the only conclusive test would be to do it on the same map, no variables then.
There's one reason why I never did what your doing Chris and that's the copy shops! So much time to invest and once complete it will be copied. Yes you can change the keys for obd but that doesn't stop anyone with the ability to bench an ecu reading all the hard work!

421's are the best bet. I think the cams are £495 and shipping about £50 UPS. Will double check though
