If you’re happy with the job and how fast he did it (a bodyshop would take a week to paint various panels, at least) then forget about the money and just enjoy...
It’s long gone. Just punted it on as it was.
Sold it to a mate that loves doing up old stuff so it will live another day. But it was too far gone to make it financially viable.
A mouse had chewed through the loom, Belts, dephaser, all 4 wheels, 4 tyres, shocks, springs, front bumper repair...
I just bought one about the same condition (but a non runner (that I fixed in less than 15 seconds) and no MOT) for a grand.
For £2500 I’d expect a reasonably tidy one or an immaculate one needing belts.

Take your current seats out. (You’ll need the car up in the air for this, use axle stands as well as a hood trolley jack. Vacuum the 15 years of dead skin and bogeys off the carpets..,
bolt the side mounts to the sub frames out of the car.
bolt that lot in to the car in one go.
fit your seat...

Yeah man. My Dads C250 Diesel AMG line thing. Took in px at work about 3 years ago and he loved it. Can’t see him getting rid of it ever to be honest. It is lovely.
Used it yesterday to go to to a mini safari type place.
Wife and kids had somewhere dry to change boots and coats etc, the rubber floor in the cab got filthy from the kids and the dog. A quick wipe with an old towel and it’s like new in there again now.
