That's entirely up to you where you put it. Like what has been said Dropbox is a good option and then using third party software to automatically copy data across. Only issue with backup services are they are extremely expensive
One thing I have noticed is OSX is more locked down than Windows when it comes to sharing folders. You simple trying to share one folder over the network ?
Yes it will do because you have entered your credentials it sees you as an authenticated user so allows you to view your documents. If you set up just a single shared located and didn't enter any credentials it would only show you the one folder.
