Seal up end of september with fk1000p and then stay on top of the wheels and spray downs, as far as salt and grit is concerned.
Think about your arches. Mine are fk'd and c4'd reet up.

I'd do the former, ie fill, leave for a few weeks for the paint to harden, then wet sand and polish when you do the rest of the car. Depends on your time constraints Ads.
Build up paint, wet sand until you're happy, polish. Apply the same stone chip logic. You'll still see it, as I can still see the smart repair on mine, but the next person to own your car won't see it.
