New pads and discs need the pistons pushed right back as far as you can get it in the caliper. Its always quite tight in that respect. However, sounds like you managed to get the caliper back over the pads and bolt it back together, so even though its grabbing it should be fine once you start...
Front pad total thickness is specified at 18mm, but that includes the backplate. Backplates tend to be around 4mm thick so roughly speaking its 14mm of friction material, I would say.
The rears being 11mm mentioned above will probably be the total thickness also, so only around 7mm friction...

They should not be tight in the caliper/carriers. If they are tight its probably because theres too much built upo dust/corrosion under where the metal shims sit. Depends if you are happy to remove them or not, ironically they are part of the design meant to eliminate sqeal! But if not renewed...
