I think you need to set up 'hotmail plus'. It costs though but it's what i use on my iPhone and mac to sync it all up.

well ive just edited a contact on my iphone and it updated on my mac.

I'm pretty sure it updates to a 'cloud'. so any editing on either mac or iphone will update one another.
