At work so looked for a Let's Play video and screenshotted it, it's this menu (if you can't access it through options it might be on the pre-race menu, or on the pause menu whilst racing - have a play).
You can enable manual gears, it's not in controls though, it's in the same menu as all of your assist options like ABS and TCS etc, as disabling each of those gives you more prize £££ as a difficulty bonus.
197 drinks holder, drivers side there is a small indent above it on the bottom of the console which allows the driver to put a slightly taller drink in the holder, only for the driver though, unlucky passengers.

Yeah looks like just the same sort of thing as the Storm Island expansion for FH2 but with added snow.

In other news with the help of @craigyt removed the centre silencer of the 197 over the weekend and replaced with some straight pipe. Sounds very raspy with a few crackles and pops, small flat spot increase but nothing serious, if it becomes a bother I'll look at getting it mapped [/chav].

My 197 is on 30mm lowering springs and I think it's spot on, not 'slammed' at all, a bit firmer obviously but not crashy. There's still a slight arch gap but it's miniscule.
With yours being a 1.5 dCI not sure what your options are tbh - but I'd say 25-30mm.
