Seriously. I speak to the Be support team on an almost daily basis. In fact they have my CV right now for something I'll not go into right now. Apart from the network aside Be and O2, staff and support included, have absolutely nothing to do with each other.

Up to you mate. If you want a fast no fuss connection then go with O2, if you want a bit more support and you want to feel like a valued customer go with Be. That's about as best I can put it.

That's correct. HDMI (the technology) can obviously carry DD5.1 signals BUT the HD box only outputs stereo over it's HDMI output. Optical, as you've stated, does indeed carry the full DD5.1 signal however.
