Big fan of the clio's, but wouldn't discount something like a 306. Mainly because they are much easier to work on.
If you convince yourself that you need to strip it to be faster on a trackday, buy another car. Clio's aren't that quick, and will never be that quick. And that's not really the point of trackdays.
If it's going to be used as a roadcar, don't bother. You'll ruin it.
Pop the rear seats out...
I'm not in any way saying we should all buy one. I wouldn't want one as an everyday car, horrific tbh! But to have one to drive occasionally would be brilliant.
At the time, the 205 was head and shoulders above the competition, and hot hatches were a relatively rare breed. The 200 is one of many, and certainly doesn't stand out.
