I thought mine was all aligned properly as you could see the correct colour.
You need to make sure the tabs are horizontal, then just take it for a drive.
If that doesn't work it's likely knackered.

On a serious note, well done for having a go yourself and sticking at it.
As it's now behaving itself I would definitely recommend trying windows 10 again. It really isn't hard to get used to and runs like a dream on a half decent pc.
Either older iPad as suggested or an iPad mini? Either can be used with a keyboard and are so much easier for people to use who aren't the best with new tech.
Poor idle, bad running and increased fuel consumption would point towards the MAP sensor for me.
Although ideally, as you said, it'll be best to get it plugged in and checked.
Don't bother with harnesses if you're fixing them to seat belt points.
It's much safer to just use the seatbelt unless you have a cage with a proper harness bar.
You need a Tuner list stereo.
What does it say on the front of the one you have. You will also need the security code for it which is very easy to get.
What car and what year is it?
Sounds like you have the wrong stereo. They are either Tuner list or Update list. Pretty sure Update list started in 2005.
You might need to download an app on the windows store for your controller so you can update it. I had to do that and it's been perfect since.
It's Xbox accessories or something like that, can't remember off the top of my head.
Just in case anyone hasn't seen it, they've got a half decent sale on at the moment.
