You don't need to subscribe to anything for the updates, the discs are your licences.
I'd suggest you start with a clean wiped console as you got it used, just reset it to factory, sign in with your PSN account (which is free to create). Put a disc in and it'll tell you to download etc.
I think the main issue with the game is that there's nothing to do once you've completed it, and it doesn't take that long to complete it.

You should try FM, you could get gamepass for a month to try it cheaply. If you want more of a sim you could get assetto corsa for Xbox too.
