The problem isn't so much the paintwork, it won't strip wax that much, maybe no more than a strong shampoo solution.
It does however tarnish/stain rubber mouldings/seals etc
Solid colours are easy to do and a near perfect match can be had.
Metalic colours are not so easy to do as the metal particles tend to sink somewhat but the effect of the stone chip can be lessened considerably.

When filling the chip it does need to stand proud but not overly proud as this will mean extra sanding back and more risk of removing the surrounding paint
I use IPA to clean and a cocktail stick to paint the chip without overfilling it...

This is my car a few months ago wearing dodo green during the testing phase. It looked great but so would any wax over a well polished car ;) I gave it 8/10 iirc so not a bad wax.

He will be able to give you all the advice you need and if you wanted him to detail your car would do a much better job than any valeting company.
They won't be able to take out the swirls in 4-5 hours, nor for £20-£60
The permaguard has a filling effect on the paintwork. Be very dubious of anyone who charges £20 to remove swirls!!!
