Best allround road tyre is the hankook v12. If you're planning any track work, the rs2 is a good bet. The v12 is a better tyre than the t1r in the dry, far better. Destroys it in the wet.
Firstly, ds2500's don't ruin wheels. I've had several sets, wheels have always been fine. You're thinking CL's. Secondly, the Mintex don't perform as well as the Ferodo's.
They'll look great once the cars cleaned up. I'd go for anthracite personally. Would look fantastic on a black car, added bonus of being easier to sell in the future. Bloody light, aren't they!
The standard wheel can't be moved afaik, due to the airbag connactions. You could use a flat wheel (sabelt etc) with spacers, but then you're moving the hard centre closer to your face. Dished is the best option tbh. But don't get suede, won't last.
Track opened on time, was slippery to begin with. Probably the least enjoyable day I've done at Oulton tbh. Couldn't get into a flow, drove like a jessie until the car had problems, lost the entire afternoon.
