Sump face on the car jobs we do call for a 3.2 um finish, crank case mating faces are 1.6um. You sound probably concentrate on getting across it without any vibration or judder. Using a gasket? Just get it flat.
Try it without and see how you get on with the throw. You'll probably have to bend it back a bit so it's not further away than the standard shifter.

Looks OK to me, although I've swapped from an LG g6 which wasn't the best and my eyes are fucked so what it actually looks like could be very different ?. I'll have to put it next to the wife's S9 and compare.

No worries. It may be wise to familiarise yourself with prices of things like roll cages, coilovers wheels and seats so you can make a better assessment of any track prepped cars you see. Ktec coilovers aren't as good or worth as much as AST's for example. Gauging how good a spec a track car is...
Depends where you live I think. If it's coming to your area soon and you spend most of your time there then go for it. Otherwise it would probably be wise to wait a year at least until the coverage is better and the phones are hopefully a little bit cheaper.
