There are moulded mud 'flaps' that you can get. They look far less gash, provided they're colour coded to the rest of the lower trim.

May I also suggest ditching the rear seats first, at least they're a lot easier to take out.... and put back in!

You'll probalby need to stiffen up your drivetrain and suspension if you go down the route of slicks fella. With all that extra grip, something will go pop under load. It may also be worth getting a set of old, used 15" rims, by the time you've bought 17's all round you'll have probably spent...

Stay OEM. If you have an air-line with a resonance 'valve' (?) in it, unplug that instead.
