I had exactly the same thing when I had the rear discs done without the disc spacers. Was a proper ballache to get off.
I ended up using this tool https://www.amazon.co.uk/gp/product/B01EAKFJWO/?tag=cliospnet01-21 to get them off. I had to enlarge the holes slightly to get it to go on both wheel...
They are on, I will double check on the spacer as its possible I put one side on the wrong way, schoolboy error if so! It's torqued up to 175 so it isn't that.

Got some front spacers to put on. While I’m there I need to clean the front arches as you can see the wheels are now mud slicks as I wheel span up the drive….whoops...

Hard to say, my car went through 2 MOTs with missing spacers before I changed the discs and noticed. I do keep getting ABS warnings every now and again though, which may or may not be related. Probably best to just fit the spacers and save any potential hassle to be honest.
Quick update on the turbines/maracana’s.
They still don’t clear with a 25mm spacer. You’d probably clear it with another 5mm on top, so at least 30mm!?
Sold now anyway, so maybe just swerve them unless you want Leepu spec spacers…
...for now. Was loosing first gear sometimes when stopping due to the stiff shift rocking around. As its a 3.0 it had bolts that would get in the way of a large o-ring. Also if I tighten the Stiff Shift down is squeaks loudly like a clown car made of balloons. Solution was to 3D print some spacers:
Agree with @Brigsy comments, don't worry about the spacers just yet, start with the basics, i.e. the tyres and go from there.
If you replace them all and the handling is still woeful, Its worth the money getting it aligned correctly, it might reveal some surprises.
Should handle loads better than the van, the wheelbase is fine no need for spacers.
Crap tyres will be the understeer issues, get some michelins on. If the back end feels a bit nervous at speed on the twisties the rear shocks will prob need replacing, id prob renew them and id bet your handling...

Car is a lot shorter/narrower/lighter than the van.. I'd be tempted to feet hub spacers to bring the wheels out, widen the stance?

Yeah new spacers, I always keep a spare disc kitted up with bearing and studs in my track day kit now.
I did consider the PMS upgrade, but with them being cheap (still thanks to the link) and easy to change I just keep an eye on them.

Not too much to update here. I've swapped out the 20mm front spacers for 16mm eibach items. Makes the front track match the rear a bit better rather than having the wheels pushed out so much. Also it feels slightly lighter and nimble, could be in my head though.
