I'm running a road legal track car, and mine passes with the aircraft type buckle.
2 lap belts clip into eye bolts, bolted to plates (wleded to the floor), and the shoulder straps go around the harness bar on my cage.

I paid someone to do mine. Got rid of pretty much the same as you want to, but kept the front wipers.
I also ditched the main heater setup, for a small T7 heater (for demister), and a marine fan unit for cool air (for me!).
Still have electric windows, ABS, Lights.

100mm Bass ports off eBay. Tight fit, but they fit into the holes left by the fog lights.
Either then leave as is, run some 100mm pipe to the brakes, or fit a reducer and run smaller pipework.
