If your on the same network then iTap RDP. For outside the network, then logmein is great.
If you want to stream rather than just work on a pc, you should take a look at Plex or other streaming specific services for the PC rather than a remote desktop.

I've played with the preview on my tablet laptop, and although it's touch interface is better than Windows 7, I really couldn't see the added value in it.

I have the 24" version of the Dell and it's great. I use it primarily for photo editing but also play games on it without any problems. I would have loved the 27 but couldn't justify the extra cost at the time.
Do you have different resolution settings on the iPad and Xbox to the iPhone? Depending on what quality stream you are requesting from the server, a different load will be put on it.
There is a free app which will run iTunes as a service on WHS. It means that you can enable homesharing without having to log onto the machine. I use it on mine and can stream all music to my iPad/ iPhone from the server.

2nd hand and get a great set up! I was going to sell my old one recently and was amazed at how little they go for. I decided I'd rather keep it all and give it to one of my sons when they are older than sell for peanuts.
You can download it from Canon if you really want Zoombrowser etc. You have to do a few registry changes to make it load though.
There is a guide here, but I am not 100% whether it works with the latest versions...

In answer to the other andy, you need to enable "personal hotspot" in order to tether the two via Bluetooth. If you can't see the option, then your provider has disabled it and you have to either pay for it to be enabled or jailbreak and use "thetherme" from Cydia.
