I'm always trying to get people I relativity trust to do a basic wash on my cars. I would never take them to a car wash place, and often I just don't have the time to spend 2-3 hours on them myself.

Deflector plates are genuine Renault cup racer fiberglass ones. I'm not sure they are around anymore. You can buy other deflector plates online though, like from CMComposites.
I couldn't run a car on track without one. The fear of not knowing would drive me crazy. I love being able to see when its warm enough for beans and when it's getting stable during sessions.
Also to keep an eye on oil pressure keeps my brain relaxed.
Oil temps are not an issue if you get an oil cooler mate.
When Graham and I went to Brands last Wednesday my oil temp was stable around 105 degrees. Graham's peaked at 115 degrees. Only difference being he hits the limiter and I short shift very early like a pansy.
6 ft 2 and zero issues in mine. Not standard seats or frames though.
One thing to note, is if you have a full cage a helmet might get tight in the front. I have to slouch a little in my mates car. OMP subframes, side mounts, buckets, full cage.

Have you checked the geo of the car?
Something may be bent on the rear and you might require shims to correct it. Ideally want between -1 and -2 degree camber and 30-40 mins toe in on the rear to scrub the tyres.
