does this have to be carried out while the ecu is in the car?

For example, could i send my ecu off to a tuning company (prob JMS or K-Tec) and them map it and return it? Then plug straight in and go?

Yup. Can be done when on the car via OBD socket or you can remove ECU and send away to be remapped.

no you would need to take your car to them as they will live map it on a rolling road unless it is an off the shelf chip which you could then fit to your ecu yourself

Generic map or chip can be done with the ecu out of the car but a proper map is live and done when the engine is running

As your car is putting out nearly 190bhp atf / aprox 160bhp atw then I assume it has internal work done? If that is the case then a custom calibration or a rolling road calibration would be the best value for money, both of which need the car & ECU together to tailor the map correctly.
