I always assumed a compete decat (as opposed to a sports cat) would not pass the MOT and therefor void your insurance.
I asked this question on the CTR forum and people were adament most insurance companies will accept a decat as a valid modification!?!?!?!

There are stricter emission controls for cars after 1992 but if you can achieve that without using a cat sometimes.
I have a decat on ym 1.4 Clio (1996) but plan on just putting the CAT back on come MOT time.
