The way that I usually do it is to rip the DVD to a video file (I use Xilisoft DVD Ripper) then edit the file in Windows Movie Maker to select and save the audio as a WMA file. Then convert the WMA to MP3 if required (Ease MP3 to WAV converter will do it).
