What else do I need?

Giving my 182 a service and doing the following :

Engine Oil
Oil Filter
Air Filter
Spark Plugs

Also doing the Gearbox Oil, as I can't see it having been done already

What do I need in terms of washers/gaskets to replace the old ones?

As I understand it I'll need a new sump washer (which I've got) for when changing the engine oil,

A new washer for the gearbox sump plug?

And will I need any new gaskets or similar for when removing the plenum/inlet manifold?

New washers on both.
Assuming your only removing the upper part to access the plugs then no.
