Sounds like you're almost all the way there mate!
If you've got a wobbly 3/8" extension, you should be able to get on the top bolt too. It's a bit fiddly, but do-able.
Rivets on the skirt, 100%. I normally just take a grinder to the side skirts on breakers, but on yours, you'll need to drill...
Front few rivets off the side skirts. Angle out until you can get a 10mm ratchet spanner in for the wing bolt.
With the scuttle, you don't have to remove the wipers, but it's easiest to if you've got a puller. I normally just manouvre the scuttle out of the way and use a UJ and 3/8"...
Next time I have s breaker on the driveway I'm going to empty a full boiling kettle onto a frozen screen. Just to see.

Yep, those bits squared above are the bits missing.
TBH, they're a cnut to fit anyway- i'd just have some custom springs made up that suit the height you want!

Unsure on which brand of calipers, but I definitely fitted a set of 172 DS2500's into a GTi-6 no problems.
Alfa GTV 3.0 pads fit too, but the Clio ones are bigger iirc..
