Mats, the genuine RenaultSport mats are decent and around £50 iirc
Tyres, I like the Contisport contacts and The Michelin PE2 , have a look in the tyres and brakes section there's a big tyre thread pinned at top
The little spacers are missing I'd say, it will keep happening if you don't replace them

If doing more track days the DS3000 would be a good choice if keeping standard calipers
Also changing the fluid and making sure the existing pads aren't binding would be a good start. They often get wedged in too tight and don't have room to expand when hot
