The bridge cameras are very good value for money and cover a large focal range but with a DSLR you need a wide variety of lenses and more after image processing, compacts do far more sharpening and enhancing as the image is taken.
Tripod is essential really, then a remote would help remove camera shake.
Your best bet would then be Av or Tv mode, set the camera to shoot for sevaral seconds, 8 for examples with a high F number. Then click and hope that lightning strikes when your shooting.
On the what camera front I'd...
Thanks, nearly ALL my recent shots are with the 50mm f/1.8, with and without extension tubes! Love it to bits, bought a sports zoom (70-200mm) and havn't had a chance to use it yet lol the 50 is on all the time..
Its on par with the 350D, it has a few more mega pixels to compete with the Sony alpha and D80, as hey most consumers count mega pixels like they are the be all and end all. The only real improvement is the dust removal, the single lcd screen should drain the battery, it also has less noise low...
the 400D is out v.soon, so thats an ok price for the 350D
HOWEVER if you want the ranges that the fuju provides with its 1 permanent lens you'll have to spend a lot of money on various lenses for the 350D.
should have brought a Canon then you could try mine on at the airfield days :P
Glad you've gone SLR though, I don't know the nikon range but the kit lens should be wide enough for good landscape, on a complete tangent to whats been suggested have you thought about a prime, the Canon 50mm f/1.8...
If you use XP download ImageResizer..

Its a simple case of right click on file and pick a size, not sure if the quality will be as good as original though...
I bought mine yesterday, now I just need some bastarding sports to shoot! been doing macro with it in the garden lol
Not a very good demonstration of its capability I'm afraid :D
On the subject of cheap 350D's, this is Canons outlet for returned and refurbished parts, the price has crashed on here! used to be £100 more than now..

lol true I was just about to edit and add, 'for what it is' meaning:
Cheap, its just a starter, covers the basic ranges, don't expect to take great macro or work in low light without a decent flash but it can take great pictures in the right conditions.
Yup, you'll find youself thinking how the hell does this thing work! Learning how to work with the kit would probably be best, and anyone who says its truely crap needs to look this thread up http://photography-on-the.net/forum/showthread.php?t=185522
Its fantastic, for what it is.
I'd look into either the Nikon D80 coming soon or the Canon 400D also coming soon, maybe even the Sony Alpha, althought to be honest I'm bias towards Canon. Also the 350D is more than enough to start with and you'll see it at bargain prices come October.
Best lens you can buy after the kit...
When you say mass produced 'Hot Hatch' I presume you mean 1.2 corsa?
If you were however refering to the sport range I see no issues with engine modification, its the top of the range model, if you want a fun fast hot hatch go for it.
I'm interesting in seeing these 'result' threads!!
At a quick glance maybe the Panasonic Lumix DMC-FZ5?

With memory you should still be under budget..
