d80 is probly overkill for beginner, but go for it if you can afford it. D40/50/70 is probly better and will cost between £200-£300 + extra for other lenses.
E-510 does exposure bracketing, however you can do HDR on ANY photo by creating 3 exposures and generating the HDR image through something like Photomatix.
some nice pics there, i especially like the one with the grey horse rider number 45. I would look to user a slower shutter speed to get some background blurring to get a sense of speed. Looks like the D40 suits the 18-200 very well though, pictures are very sharp!
