Different people say different things, i've heard that you should do 3 or 4 really harsh stops from 80ish to bed them in and others say just be carefull on them for a bit. Me and most of the chaps at EBC i speak to agree to just drive them like normal, i always have and never had any problems...

Have you checked the discs and pads? They can get a bit grabby if there really low.

from what i know milltek have a really good reputation for quality, i had one on my mcs and loved it!

Not a new M3 fan usually, big fan of the E46's however.. But this one looks amazing, love the colour! There is a M5 round the corner from me in the same and always looks stunning :)
