Kanban isn't about quality management though. It's a technique for optimizing a manufacturing process regarding it's economy. Just another proof that the SPAX guys are utter tools... I guess they aren't even ISO9001 certified.
If the toe is measured/stated in degrees (proper), changing wheels will not affect it. It does change when you state it in mm. Laser alignment system should use degrees as this is the proper way.

Weitec's are fine. Rebranded KW coilovers. DS2500's are overkill on a road car. A fresh set of OEM pads is totally sufficient.

Spring rates, valving on the dampers and rear height adjusters are different. H&R's are firmer and can be set lower than Bilstein's. I'd go for the H&R's (run them on my 172), they are around 300 quid more than the Billies though.
Many petrol engines do have an EGR. The system you are referring to is a secondary air system (helps the cat converter to reach light off temperature earlier).
Accelerator is plug&play (depending on cable driven or drive-by-wire). The other pedals are a bit more tricky. Easiest option is using only the pedal covers from the 1*2, drill your pedals in the correct position and rivet the covers on.
