Yeah, the karcher bit and metal tube will unscrew from the brass housing. You'll need some grips and probably a bit of heat to the brass body. Use a bit of PTFE tape or liquid sealer on the new fitting.

You'll see it's found a couple of your ECUs there. If you click on one (might need to double click), it should then populate it into the ECU box top left like I mentioned. You can then go ahead and read/clear faults. You needed to have an ECU selected, that's why it's come up with the error...

Yeah you can, slightly long winded. However, if you go to scan it brings up a another window. If you hit scan on that it will take forever as it tries to look for every type of ECU in it's library. What you want to do is select the relevant one from the drop-down list, say ECM or UCH, ABS...

They're the door sensors/switches, so it knows when the door is open/closed. They bolt in from behind the interior trim i think.

Losing 1 abs sensor shouldn't kill the speedo reading as far as I know. I've had one die at Oulton and it was fine.

If you're getting stock/oem type pads, look for ones that have GG printed on the code on the backing plate. That's the highest friction coefficient for a road rated pad. Most are FE or FF.
