197 is a cracking car, though the cup pack imo is overkill for road use, and thats having had a 197 cup for 2.5 years. You really need to work the revs though otherwise it will feel lifeless. Keep it at the top of the rev range though and it will make you smile! Currently I have a standard 1.7...

Paint takes more time, more preparation, and more money (primer, paint, lacquer, wet and dry) plus if you want to sell you don't have to repaint stuff.

They look really good mate. I'd recommend you try aperture and shutter priority modes though. These allow you to set either aperture or shutter speed and it auto sets the other setting. Often useful for giving you the effect you desire without having to worry about exposure.
