It's just down to the gear ratios, these are designed to be sporty/nippy cars, so need shorter ratios compared to cruising barges like Audis.

I take it you mean best cruising speed for best mpg return? You'll still get 30+mpg at 70-80. I got 48mpg at 65-70mph on a run to France.

Tell tale signs of an RSTuner map is a higher cold start idle of around 1100-1200rpm then dropping to about 800-900rpm and raised rev limit when warm to 7500.

I use 105nm day to day. You don't want to be tightening them all the time when hot as you'll stretch the bolts. After the first session, let it cool a bit and then check again to 105nm. Then again after lunch, they shouldn't loosen tbh mine never do.
