Mine has used Triple QX from Euro Car Parts for the past 7 years. It's RN700/710 spec. It's not an F1 engine 😅

Bigger piston doesn't necessarily mean more pressure or force. It's just more even pad contact. But seeing as standard 1*2 rear calipers have tiny pistons, I think the 34mm will be fine.

243 will be enough to stop it vibrating loose. 270 would be overkill.

It'll do like 4+ sets of wheels easily though and the brake dust washes off with just water practically.
