We spec' all options except the 2TB HDD. Why, you buy a computer that suits your needs the now and at some point in the near future your needs change. We did it (spec'd it up) in an attempt the future proof it.
You need to authorize your itunes account on that computer (Your only allowed 5 authorized computers so if your already at 5 you'll have to de-authorize one). Its in one of the top drop down menus. I'm on a Mac and its in the Advanced menu.

The older RAM does seem to be more expensive than the new stuff but it aint that much more. Should speed it up considerably.
Also, as opposed to sticking a replacement HDD in, would you not consider going down the SSD route? We have SSD in our Air and iMac and everything is instant.
It aint hard to change out the RAM. Crucial are the best/cheapest and have a computer scanner so that you cant order the wrong stuff (Basically run the scanner and it'll tell you what you can have).
Nope. Even on the Kanex site the new iMacs aint listed as compatible due to the thunderbolt port replacing the older mini-display port. Kanex are working on a new converter but they have been for a while and no word as yet of a release date.
Gotta go for the 27". The extra screen space means you can do so much with apps running side by side not having to keep minimising or maximising windows.
With the 27" you also get 2 thunderbolt ports as opposed to the 1 on the 21". With mainstream PCs adopting thunderbolt technology next year...
I picked up a trackpad at the Apple store and after a wee play I think its better for just playing around on tinternet and general system stuff on the iMac however for editing photos and the like the magic mouse is better.
Also, the trackpad click is fudging loud lol.
