i'd still recomend H&R's, we have a customer who has them on his cup, and by looking at the car you'd think it was standard (ride height wise)
i would say his useage is similar to yours

EBC vs DS2500, there's no comparison, DS2500's win
yellows are ok, but they're mean't to be an enduro race pad, i found them a bit parp when cold, but i felt they didn't offer as much bite as a DS2500 pad (this is on track)
Reds rip discs to pieces, but work well
Greens are a good uprated...
the first number refers to the oils viscosity (thickness) at i think 0degC (can't remember) the second number refers to the oils viscosity at 100degC
the lower the first number means it can withstand a lower outside temp
