Yes you can. The more layers you give your car, the more swirls that will be filled. Up to 5 layers would work really good.

No idea what stores are local to you buddy. From Halfrauds, probably not a lot... maybe a metal sealant like NXT Gen Metal Sealant... if they do one? But you'd be just wasting money.
203s works very well on VAG paint work. That, a decent cutting pad and followed up (if required) but some 85RE on a finishing pad, also from Menzerna. Should see you right with a little bit of effort.

As you've mentioned, the White Diamond is a good shout, decent filler glaze and should add that little bit of "something" to your paint.
Sealants wise, I tend to find acrylic sealants work the best. I would therefore suggest Chem Guys Blitz Spray or Werkstat Acryllic Jet.
