I did the same couple years ago... sprayed trim around radio, door handles, ashtray, and hand brake and small handles on the seats for reclining and moving seats...
It looks great and very clean since original trim gets dirty and some kind of top rubber layer starts to peel off and it looks awful...
Good luck with taking the dash apart, however it is not that hard at all...
I did it recently since I had to replace central air vents that broke...
Top part has 5 screws if I remember and you have just to pull it back, bottom part is little bit more tricky and has about 8 - 10 screws, however you have to take the steering wheel off and drivers airbag of course (pass side stays in place)...
When you have bottom part out there are rivets I think that central trim is connected with dash or it was glued, I can not remember, but after you are done just put new rivets from the top, prepare some glue gun if you break some other spots where air ducts are connected with lower dash
and it will look great...
Air ducts behind is glued with lower dash and goes off together... Just a reminder so you don't start pulling dash without black air ducts behind...
Don't forget to disconnect the battery...
Just take your time and take pics or write down where are the screws so you do not end up with some extra ones afterward...

P.S. Be very careful when handling air vents since they are very fragile... and if you are painting central section paint and the sides it looks great... I will take couple pics and post it this weekend so you see what I am talking about...
