Either that or set up a few playlists for each, and set to syncronise the individual playlists automatically as opposed to 'All Music'.

Bang on, this is what I do to sync my iphone, ipod touch and an old mini ipod i use in the car all from the same pc, to get get different playlist selections on the different devices. Itunes knows which device is plugged in and then what to sync it with.
