Oil Sandwich plate order

What order do people run their sandwich plates (assuming they have two)? Most of the ones I've seen are as below, sensor take off first followed by oil cooler:

I've been thinking that this doesn't make any sense. Since both plates affect the outer channel of the oil path, and the oil filter flows in the outer section and out the middle.

What this means to me is that the sensors will be taking their reading upstream of the oil cooler, but surely the actual pressure/temperature of the oil hitting the engine is more important and than the pre cooler data.

Wondered what everyone else running double sandwich plates is doing and if I'm missing something here.
 
I would run single plate that covers all instead of double stack, less to go wrong.

You could get a boss welded in sump for oil temp, and tee into the oil light sensor for pressure.
 
You guys are an exercise in patience! 😂

Would use a double length fastener so shouldn't be more to loosen, you could argue there is more seal area to fail but still, not a question of the merits of a single plate over a double stack, just in the logic of sensor/cooler order!
