Get it filled with the dye in and find the leaks, and fix. I had mine filled up recently and it fired straight up ice cold, they forgot to put the dye in so need to get it redone, lasted 3 weeks though. Id bet its the condenser leaking, as above replace that if its looking sketchy
Bang the full 182 running gear on, rear beam, front subframe the lot. Keep the dci rack, and one of those boxes for the ecu off ebay to control it.
You can code the esp out with clip if going for a cup setup with no abs.
The custom mandrel for knocking the cam seals home is a good idea. I had to use an old crank pulley to do mine.

Bang a cheap stock wheel and airbag on, reprogram the airbag ecu to get the airbag light working properly so it looks legit, without even wiring airbag up. Take it to another mot test station next year, he sounds like a bit of a jobsworth
Dci is also 58mm bolt spacing.
You might have problems using 60mm clio sport struts, as they are probably m14 bolts compared to m12 on non sport, and possibly thicker upright on the hub, would need to check that.
