I love everything about this build. Proper job. Quick Q: Do you know of any way to modify the height of the standard shifter? I really want to bring my 200 gearknob closer to the wheel but there are NO options out there, bar the £1k CAE.

It's just classic CS, making the car great on track but horrible everywhere else. I'd much rather have a fast road/track car build than an all-out track car myself.

They will be fine. Either 195 or 205 section were OE fitment on Mk2's. Most people tend to run 205 but 195 will be fine.

Really weird. Re the OP, a lower uprated dogbone and an uprated upper torque mount would help.

I'd always do the dephaser as a precaution. They've changed the design of it for the Mk3 and they rarely fail, but I'm still having mine changed just in case.
